  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 lb penne pasta
  • Salt and black pepper to taste

Instructions

  1. Cook penne pasta according to package directions until al dente; drain and reserve about ½ cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; sauté until browned and cooked through. Remove from skillet.
  3. In the same skillet, sauté onion until softened, then add minced garlic until fragrant.
  4. Stir in thawed spinach, followed by chicken broth and heavy cream. Simmer until sauce thickens.
  5. Mix in grated Parmesan cheese and optional nutmeg. Fold in cooked penne pasta and chicken; adjust consistency with reserved pasta water if necessary.
