  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and herbs; sear each side for about 5-6 minutes until golden brown.
  3. Remove the chicken and add minced garlic to the skillet; sauté for one minute. Add sliced mushrooms and cook for about five minutes until softened, then stir in chopped spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for 3-4 minutes until the sauce thickens slightly.
  5. Transfer seared chicken to a baking dish and pour the creamy mushroom-spinach sauce over it. Top with mozzarella and Parmesan cheese.
