  • 2 slices sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Mash the avocado in a bowl with lemon juice, salt, and pepper.
  2. Spread mayonnaise (if using) on one side of each slice of bread. On one slice, layer the avocado mixture, followed by shredded chicken and cheese.
  3. Top with the other slice of bread (mayo side facing out).
  4. Heat butter in a skillet over medium heat and grill the sandwich for about 3–4 minutes per side until golden brown and the cheese melts.
  5. Slice in half and serve hot.
