  • 1/3 cup vegetable oil

  • 1 cup pitted fresh or thawed frozen cherries
  • 1/2 cup all-purpose flour (for topping)
  • 1/3 cup brown sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, egg, and vanilla until combined.
  4. Combine wet ingredients with dry ingredients; stir until just mixed. Fold in cherries.
  5. For the topping, combine flour, brown sugar, and cinnamon; cut in butter until crumbly.
  6. Fill muffin cups about 2/3 full with batter and sprinkle topping evenly over each.
  7. Bake for 20–25 minutes or until a toothpick comes out clean.
  8. Cool for a few minutes before transferring to a wire rack.
