  • 1/2 cup cherry juice
  • 1 teaspoon almond extract
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • 1/4 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a large bowl, beat mascarpone cheese and heavy cream until smooth and fluffy.
  2. Add cherry juice and almond extract; mix until combined.
  3. In a separate bowl, blend granulated sugar with fresh cherries; fold into mascarpone mixture.
  4. Quickly dip ladyfingers in cherry juice and layer them in a baking dish.
  5. Spread half of the creamy mixture over the ladyfingers; repeat with another layer of ladyfingers and remaining cream.
  6. Cover and refrigerate for at least four hours or overnight.
  7. Before serving, dust with cocoa powder and sprinkle shaved chocolate on top.
