  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon black pepper
  • 1/4 cup tomato sauce (or salsa)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Butter or oil for frying

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the ground beef. Drain any excess fat.
  2. Add chopped onion and cook for about three minutes until softened; stir in minced garlic and cook for another minute.
  3. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for about 3–4 minutes.
  4. Lay tortillas flat and layer cheese on one half of each tortilla. Spoon the beef mixture over the cheese and top with more cheese before folding.
