Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips, melted
  • 1 cup Reese’s peanut butter cups, chopped

Instructions

  1. Cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  2. In another bowl, whisk flour, baking soda, and salt; gradually combine with wet ingredients until mixed.
  3. Chill the dough for about an hour.
  4. Prepare the cheesecake filling by beating cream cheese until smooth; mix with sugar, egg, and vanilla.
  5. Preheat oven to 350°F (175°C). Scoop chilled dough, flatten into disks, add cheesecake filling in the center, fold edges over filling to form balls.
  6. Bake for 10–12 minutes or until edges are golden. Cool slightly before drizzling with melted white chocolate and sprinkling chopped Reese’s on top.
