Ingredients

Scale
  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 2 cups jasmine rice

Instructions

  1. Begin by patting the chicken thighs dry and seasoning them with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear the chicken skin-side down for 5-7 minutes until golden brown.
  3. Flip the chicken and add soy sauce, brown sugar, garlic, and ginger into the pot. Stir to combine.
  4. Pour in the chicken broth to cover the chicken and bring it to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes until cooked through.
  5. Meanwhile, rinse jasmine rice under cold water. Cook rice in a separate pot with water until fluffy (about 15-20 minutes).
  6. If desired, thicken the broth with a cornstarch slurry for added richness.
  7. Serve the sliced chicken over rice and ladle the aromatic broth on top.
