  • 1/2 cup unsalted butter (melted)
  • 1/4 cup granulated sugar

  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar for caramel sauce
  • 1/4 cup water for caramel sauce
  • 1/2 cup heavy cream for caramel sauce
  • 2 tbsp unsalted butter for caramel sauce
  • 1/4 tsp salt for caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. For the crust, mix graham cracker crumbs, melted butter, granulated sugar, and cinnamon in a bowl. Press firmly into the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth. Add granulated sugar, eggs one at a time, and vanilla extract; mix until creamy. Spread over the crust.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; spread evenly over the cheesecake layer.
  5. For the crumble topping, mix flour, brown sugar, cold cubed butter, and chopped pecans until crumbly; sprinkle over the apple layer.
  6. Bake for about 45 minutes until set. Allow to cool completely before cutting into bars.
  7. To make caramel sauce: Heat granulated sugar and water in a saucepan until dissolved; cook without stirring until amber-colored. Stir in heavy cream, butter, and salt off heat. Drizzle over cooled bars before serving.
