  • 2 sheets of puff pastry
  • 2 tablespoons honey
  • 100 grams crumbled blue cheese
  • 100 grams grated Parmesan cheese
  • 50 grams chopped walnuts
  • 68 sprigs fresh thyme leaves
  • 1 tablespoon milk
  • Sea salt
  • Cracked pepper

Instructions

  1. Preheat your oven to 180C (350F) or 200C (390F) for non-fan ovens.
  2. Drizzle honey over each sheet of puff pastry.
  3. Evenly distribute walnuts, blue cheese, Parmesan, thyme leaves, salt, and pepper over the pastry.
  4. Roll up each sheet tightly and cut in half lengthwise.
  5. Twist each piece into a coil shape on baking paper.
  6. Brush with milk for a golden finish.
  7. Bake for 25-30 minutes until puffed and golden brown.
