  • 4 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • 1 ½ cups green pepper
  • 1 cup red pepper
  • 14.5 ounces black beans
  • ½ cup frozen yellow corn
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • 3 tablespoons fresh cilantro

Instructions

  1. Preheat your oven to 425°F.
  2. Toss cubed sweet potatoes with 3 tablespoons of olive oil and spices in a bowl until well coated.
