  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh herbs (chives, thyme, sage)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, for 40-50 minutes until golden brown and caramelized.
  2. In a pot of boiling water, cook chopped Yukon Gold potatoes for about 20 minutes or until fork-tender.
  3. Drain the potatoes and mash with butter, half & half (or coconut milk), and salt until creamy.
  4. Mix in half of the caramelized onions and Parmesan cheese until well combined.
  5. Transfer to a serving bowl and top with remaining onions and fresh herbs before serving warm.
