  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Salted Butter or Non-Dairy Butter
  • 3/4 Cup Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese or Vegan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Slice the yellow onions thinly and caramelize them in olive oil over medium heat for 40-50 minutes until browned and sweet.
  2. Wash and chop the Yukon Gold potatoes; boil in salted water for about 20 minutes until fork-tender.
  3. Drain the potatoes, then mash with butter and coconut milk until smooth.
