  • 2 tablespoons olive oil
  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh chives for garnish
  • Fresh thyme for garnish
  • Fresh sage for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook slowly for 40-50 minutes until golden brown and caramelized.
  2. In a large pot, boil water and cook chopped Yukon Gold potatoes for about 20 minutes until fork-tender.
  3. Drain excess water from the potatoes and mash with butter, kosher salt, and half & half (or coconut milk) until smooth.
  4. Stir half of the caramelized onions into the mashed potatoes along with Parmesan cheese.
  5. Transfer to a serving bowl, top with remaining caramelized onions, and garnish with fresh herbs.
