  • 3 tablespoons olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon crushed red chili flakes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey (regular or spicy)
  • 1/3 cup crumbled feta cheese
  • Chopped fresh chives or parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes, then slice them lengthwise and brush both sides with olive oil.
  3. In a small bowl, combine cinnamon, smoked paprika, cumin, coriander, crushed red chili flakes, salt, and pepper. Sprinkle the mixture over the cut sides of the sweet potatoes.
  4. Place the seasoned sweet potatoes cut-side down on a parchment-lined baking sheet and bake for 30-40 minutes until soft.
