  • 2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
  • 2 large eggs
  • ½ cup (120ml) milk
  • ¼ cup (60g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup (120g) powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix eggs with milk, melted butter, and vanilla until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined; then gently mix in diced apples.
  5. Drop spoonfuls of batter onto the prepared baking sheet and bake for 15–18 minutes or until golden brown.
  6. While baking, prepare the glaze by mixing powdered sugar, milk, and vanilla until smooth.
  7. Once cooled slightly, drizzle glaze over fritters and serve warm.
