  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 lb medium pasta shells
  • 1/4 cup turkey bacon (or smoked chicken)
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, shredded

Instructions

  1. Slice onions into ¼-inch pieces. Heat butter and olive oil in a skillet over medium heat; add onions and caramelize for about 40-50 minutes.
  2. Cook turkey bacon in a separate skillet over low heat until crispy. Set aside and reserve drippings.
  3. In the skillet with drippings, whisk flour over medium heat until golden, then slowly add heavy cream and milk while stirring continuously.
  4. Once boiling, lower heat and add mustard powder, thyme, garlic powder, and hot sauce.
  5. Cook pasta according to package instructions until al dente; drain well.
  6. Reduce sauce heat to low and mix in the cheeses until melted, then combine with pasta and caramelized onions.
  7. Top with chopped turkey bacon and garnish before serving.
