  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (cajun or turkey)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C (400°F). Toss butternut squash with olive oil, salt, and pepper; spread on a parchment-lined baking sheet.
  2. Roast squash for 15-20 minutes; then add Brussels sprouts seasoned similarly and roast for another 20-30 minutes until crispy.
  3. Boil salted water and cook bow tie pasta according to package directions until al dente; reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced sausage until browned. Remove from skillet.
  5. In the same skillet, add garlic and cook briefly before adding butter until melted.
  6. Combine cooked pasta, roasted vegetables, sausage, smoked paprika, and thyme in the skillet; mix gently.
