  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (chicken or turkey)
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss butternut squash with olive oil, salt, and pepper. Roast on a parchment-lined baking sheet for 15-20 minutes until tender.
  2. Meanwhile, toss Brussels sprouts with olive oil, salt, and pepper on another baking sheet and roast alongside the squash for about 20-30 minutes.
  3. Cook bow tie pasta in salted water until al dente; reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced smoked sausage until golden brown; then set aside.
  5. In the same skillet, add minced garlic and cook until fragrant. Add butter and combine with drained pasta, seasoning with salt, pepper, and smoked paprika.
  6. Stir in roasted vegetables and sausage; mix gently to combine.
