  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef cubes until browned on all sides; set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Stir in tomato paste and cook for an additional minute.
  4. Deglaze the pot with a splash of beef broth.
  5. Return the seared beef to the pot along with remaining broth and add carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, salt, and pepper; add bay leaf.
  7. Bring to a boil then reduce heat to low. Cover and let simmer for about 2 hours until beef is fork-tender.
  8. Taste and adjust seasoning before serving hot.
