  • 23 tbsp Jamaican Green Seasoning
  • 2 tbsp Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 2 medium russet potatoes (peeled & cubed)
  • 2 medium carrots (peeled & chopped)
  • 1 medium bell pepper (chopped)
  • 1 cup organic chicken stock (low-sodium)
  • 13 scotch bonnet peppers (adjust for spiciness)

Instructions

  1. Marinate the chicken with Jamaican Green Seasoning, curry powder, all-purpose blend, sea salt, smoked paprika, and olive oil for at least 30 minutes.
  2. In a large pot over medium heat, sauté minced garlic and ginger in olive oil until fragrant.
  3. Add potatoes, carrots, and bell pepper; stir for about five minutes to coat in spices.
  4. Introduce marinated chicken, coconut milk, and chicken stock; bring to a gentle simmer for about 30 minutes until the chicken is tender.
  5. Add whole scotch bonnet peppers and thyme sprigs; simmer for an additional few minutes before serving.
