  • 1/8 tsp ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp pure vanilla extract
  • 23 large honey crisp apples, grated

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, combine vegetable oil, eggs, both sugars, sour cream, and vanilla extract.
  4. Mix wet ingredients into dry ingredients gently until combined.
  5. Fold in grated apples.
  6. Pour batter into prepared pan and bake for about 35-40 minutes until a toothpick comes out clean.
  7. Cool slightly before making the brown sugar icing by melting butter with brown sugar and heavy cream; stir in vanilla and powdered sugar until smooth.
  8. Drizzle icing over the warm cake and enjoy!
