  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven. Slice the apples thinly and toss them in a bowl with sugar and salt.
  2. Spread the apple mixture on a lined baking sheet and bake until tender and slightly caramelized.
  3. In a saucepan over medium heat, whisk together egg yolks, cornstarch, milk, sugar, salt, and vanilla bean paste until thickened into custard.
  4. In a mold, layer the cooked apples and custard alternately until all ingredients are used.
  5. Chill in the fridge for at least an hour before serving.
