  • 2 medium apples
  • 30 g Light brown soft sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Mixed spice
  • 1 tsp Cornflour (cornstarch)
  • 10 g Butter (unsalted)
  • 8 g Light brown soft sugar
  • 17 g Plain flour
  • 1/8 tsp Cinnamon
  • 175 g Butter or baking spread (softened, unsalted)
  • 175 g Light brown soft sugar
  • 3 Eggs (large)
  • 175 g Self raising flour
  • 1/2 tsp Cinnamon
  • 1/4 tsp Mixed spice
  • 175 g Butter (softened, unsalted)
  • 350 g Icing sugar
  • 1 1/2 tsp Cinnamon
  • 23 tbsp Milk

Instructions

  1. Prepare the apple filling by peeling, coring, and chopping the apples. Cook them with light brown sugar, cornflour, cinnamon, and mixed spice over low heat for 10-15 minutes until tender.
  2. For the crumble topping, combine plain flour, light brown sugar, and cinnamon in a bowl. Rub in unsalted butter until crumbly and bake until golden.
  3. Preheat oven to 160C Fan/180C/350F/Gas Mark 4 and line a cupcake tin with cases. Cream softened butter and light brown sugar until fluffy. Add eggs one at a time while mixing, then fold in self-raising flour and spices.
  4. Fill cupcake cases with batter and bake for 20-25 minutes until golden brown. Cool completely before coring each cupcake to fill with apple filling.
  5. For the buttercream, beat softened butter before adding icing sugar and milk until smooth. Pipe onto cooled cupcakes and top with remaining apple filling and crumble.
