  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (melted) for streusel
  • 50 g all-purpose flour
  • 50 g brown sugar for streusel
  • 20 g rolled oats
  • 50 g brown sugar for apple filling
  • 1 teaspoon ground cinnamon for apple filling
  • 2 teaspoons cornstarch
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Crush biscoff cookies and mix with melted butter.
  2. Press cookie mixture into the bottom of a springform pan for the crust.
  3. Combine melted butter, flour, brown sugar, and oats for the streusel topping.
  4. Toss sliced apples with brown sugar and cinnamon in another bowl.
  5. Beat softened cream cheese until smooth; add sugar, yogurt, vanilla, spices, and eggs one at a time.
  6. Layer cheesecake filling over the crust with half of the apple mixture; repeat layers.
  7. Top with streusel topping and bake for about 85 minutes until set.
  8. Cool completely before refrigerating for at least four hours.
