  • ½ cup milk
  • 1½ cups peeled and diced apples (about 2 medium apples)
  • For the streusel topping: ½ cup all-purpose flour, â…“ cup packed brown sugar, ¼ cup old-fashioned oats, 1 teaspoon ground cinnamon, ¼ teaspoon salt, ¼ cup cold unsalted butter (cubed)
  • For the frosting: 8 oz cream cheese (softened), ¼ cup unsalted butter (softened), 3 cups powdered sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with paper liners.
  2. In a bowl, mix together the streusel topping ingredients until crumbly; refrigerate.
  3. In another bowl, whisk together dry ingredients: flour, baking powder, salt, cinnamon, nutmeg.
  4. Beat softened butter and sugar in a large bowl until light and fluffy.
  5. Add eggs one at a time followed by vanilla extract until well combined.
  6. Gradually mix in dry ingredients alternating with milk until fully incorporated.
  7. Fold in diced apples gently to keep them intact.
  8. Fill muffin cups two-thirds full with batter; add streusel topping on each.
  9. Bake for 22-25 minutes or until a toothpick comes out clean.
  10. Cool before frosting with cinnamon cream cheese mixture.
