  • 1 cup apple cider (reduced to ¼ cup)
  • ½ cup whole milk
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, cream softened butter with brown sugar until fluffy. Add egg and vanilla, then mix in reduced apple cider.
  4. Gradually combine dry ingredients until just mixed.
  5. Drop spoonfuls of dough onto lined baking sheets; bake for 10 minutes until set.
  6. For the filling, blend milk, butter, powdered sugar, reduced cider, vanilla, and salt until smooth.
  7. Cool cookies completely before spreading caramel filling between two cookie halves.
