  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • 1/4 teaspoon allspice
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and grease a 9” square baking dish.
  2. In a large pan, boil the apple cider until reduced by half (about 5 minutes). Stir in diced butter until melted.
  3. In a bowl, whisk together eggs, both sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until smooth.
  4. Gradually mix in the boiled cider mixture.
  5. Fold in flour gently until just combined.
  6. Pour batter into the prepared dish and bake for 22-25 minutes or until golden brown.
  7. Let cool slightly before topping with melted butter and a sugar-cinnamon mixture.
