  • 1 cup apple cider
  • ½ cup applesauce (or apple butter)
  • ½ cup unsalted butter (softened)
  • ¼ cup canola oil
  • ¾ cup granulated sugar
  • â…“ cup light brown sugar (packed)
  • 2 large eggs
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F and grease a bundt pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, combine apple cider and applesauce (or apple butter).
  4. In a stand mixer, beat softened butter with canola oil, granulated sugar, and brown sugar until light and fluffy.
  5. Add eggs one at a time along with vanilla extract; mix well.
  6. Gradually add dry ingredients alternating with the apple mixture; combine until just mixed.
  7. Pour batter into the prepared bundt pan and smooth the top.
  8. Bake for 45-50 minutes until a toothpick comes out clean.
  9. Cool in the pan for 15 minutes before transferring to a wire rack.
