  • 45 lb beef shoulder roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons Dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion
  • 2 firm apples
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 325°F.
  2. Trim excess fat from the beef roast and cut into large chunks if necessary.
  3. Season beef generously with kosher salt and freshly cracked black pepper.
  4. In a Dutch oven, heat neutral oil over medium-high heat and sear beef until browned on all sides.
  5. Whisk together apple cider, chicken stock, Dijon mustard, and dehydrated onion; pour over the beef in the pot.
  6. Add garlic and herb sprigs; cover tightly and braise in the oven for about three hours.
  7. Add thick slices of red onion and apple wedges during the last 30–45 minutes of cooking.
  8. Let rest in the braising liquid for half an hour before serving.
