  • â…› teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup canned pumpkin puree
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour (for streusel topping)
  • ¼ cup packed light brown sugar (for streusel topping)
  • ¼ cup granulated sugar (for streusel topping)
  • ¼ teaspoon ground cinnamon (for streusel topping)
  • ¼ cup cold unsalted butter, cut into small pieces (for streusel topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  3. In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Gently stir with a spatula until just combined.

  7. Generously sprinkle your prepared streusel topping over each muffin cup.
  8. Bake those beauties in your preheated oven for about 18-22 minutes until a wooden skewer inserted comes out clean.
  9. Let your muffins cool in the tin for a few minutes before transferring them to a wire rack.
