  • 2 cups chilled mashed potatoes
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray or olive oil

Instructions

  1. Prepare chilled mashed potatoes if you don't have leftovers.
  2. In a large bowl, mix mashed potatoes, cheeses, beaten egg, garlic powder, onion powder, salt, and pepper until well combined.
  3. Scoop about 1 tablespoon of the mixture and roll into balls.
  4. Coat the balls in breadcrumbs until evenly covered.
  5. Preheat air fryer to 375°F (190°C). Lightly spray potato balls with cooking spray or drizzle olive oil on top. Place them in a single layer in the air fryer basket.
  6. Cook for 8-10 minutes until golden brown and crispy.
